Here are two more variations of my original sweet-sour rye bread recipe I shared earlier. I love my rye bread so much that one recipe is not enough 🙂
Simple Sweet- Sour Rye Bread
Makes 1 loaf
Ingredients:
- 65 g active rye starter
- 365 g water at room temperature
- 35g molasses
- 130g pumpernickel flour
- 370g AP flour
- 9 g salt
- 25g oil
- 5 – 10g carraway seeds (to your liking)

Carrot Sweet- Sour Rye Bread
Makes 1 loaf
Ingredients:
- 65 g active rye starter
- 150 g water at room temperature
- 215 g carrot juice at room temperature
- 35g molasses
- 1 medium or 2 small carrots, shredded (about 1 cup)
- 130g pumpernickel flour
- 370g AP flour
- 9 g salt
- 25g oil
- 5 – 10g carraway seeds (to your liking)
