Turkey and Cheese Sourdough Crepes

This is one of my favorite recipes where I can use my sourdough starter discard.

Sometimes I even make more starter just to make these. They are great for breakfast or lunch. From one batch you will get about 8 crepes. They are handy on the mornings when your bread basket is empty 🙂

Ingredients:

  • 1 cup starter discard
  • 4 eggs
  • 1 Tbsp sugar
  • 1 Tbsp oil and more for frying
  • pinch of salt
  • 2 Tbsp (or more) milk
  • about 16 pieces of turkey (I use 2 per crepe)
  • about 2 – 3 cups of grated cheese of your choice

Direction:

Mix first six ingredients together in a bowl with whisk until smooth. Add more milk to thin the batter if needed.

Heat a pan over medium-high heat. Brush it with oil. With one hand, pour about 1/4 -1/3 cup of batter. At the same time, lift the pan with your other hand. Immediately tilt the pan in all directions, swirling the batter so it covers the bottom of the pan in a thin layer. Work quickly. Return the pan to heat.

Add two pieces of turkey on one side of the crepe and sprinkle with cheese. Or vice versa.

Fold the crepe in half. Fold it in half again, forming a triangle.

Cook for a bit more on both sides.

Repeat with the rest of the batter.

I love eating them with some sour cream and fresh vegetables on the side. Some people enjoy them with ketchup. Any light green salad would be great on the side as well. Marinated cabbage is especially good with them.
