It’s the most busiest time of the year!
This quick veggie with rice noodles recipe will help you a lot during this rush time.
You can have a delicious meal in less that 40 minutes. If you have an extra helper in the kitchen, you can do it in less than 30 minutes. Anyway, it’s a quick meal that you can prepare on a busy day.
My girls love noodles! We make this dish often.
This recipe is good to feed 4-5 hungry people 🙂
We found delicious rice noodles at Costco. They work great for this recipe! You can use regular ramen noodles for this recipe too.

Ingredients:
- 1 onion, thinly sliced
- 2 carrots, peeled and sliced into matchsticks
- 1 bell pepper, thinly sliced
- 2 garlic cloves, finely chopped
- 1/2 cabbage head, thinly sliced
- oil for frying
- 1 Tbsp soy sauce
- 4 blocks of rice noodles
- 1 cup teriyaki sauce
- salt and pepper to taste
- cilantro for garnish, optional
Direction:
Fill a large pot 3/4 full with water and bring to a boil. Add the noodles and cook until tender, 5 to 6 minutes, or according to the package directions.

Meanwhile, in a frying pan, heat the oil over medium heat. Add onion and carrots and cook for a few minutes. Add garlic and stir-fry until fragrant. Then add bell pepper and cook for a few more minutes. Drizzle with a bit of soy sauce and mix.




When the noodles are ready put them in the frying pan and mix with the cooked vegetables. You don’t need to drain or rinse noodles. Just put them directly to the pan from the pot you cooked them in. Reserve noodle water to use later in needed.


I usually add about a full soup ladle of noodle water to the mix in the pan. It makes the dish more moist.
After, add cabbage and teriyaki sauce and toss until warmed through.


Divide the noodles among prepared plates and serve. Enjoy!
