Chia Pudding

When your oven is still not working, you have to come up with some dessert ideas. This dessert can be served as breakfast, a snack, or a dessert.

Chia pudding is perfect for hot summer days. You prepare it the night before and enjoy it the next day. You can top it with your favorite fruit, berries, granola or even nuts.

I really love chia seeds. They are rich in fiber and a good source of omega-3 fats.

We enjoyed it with strawberries and nectarines this time. The nectarines were from our tiny orchard! So happy for our little tree. It’s our second year of getting fresh fruit from it. This year I decided to beat the squirrels and enjoy it before they do 🙂 Love using what we grow in my recipes.

Chia Pudding

For serving this chia pudding I used OUI by Yoplait glass containers. I love to save them and use for serving different desserts. These containers hold up to 5 oz. If you use them or similar size containers, you will have about 12-14 servings.

You can also make it dairy free. Just swap all dairy ingredients with nondairy ones.

For sweetness I used honey and maple syrup. You can use honey, maple syrup, or agave syrup. You can mix them like I did or stick with just one kind of sweetener.

Ingredients:

  • 3/4 cups milk
  • 1 cup plain yogurt
  • 2 Tbsp. honey and 1 Tbsp. maple syrup
  • 1/2 tsp vanilla
  • pinch of salt
  • 1/3 cup chia seeds
  • about a pound of strawberries (sliced)
  • 2 Tbsp. sugar
  • about 4 nectarines (chopped)
  1. The night before: In a medium bowl whisk together milk, yogurt, honey, maple syrup, vanilla, salt and chia seeds. Whisk until combined, cover, and place it in the fridge to chill overnight. Chia seeds will swell into gelled-like texture and give perfect pudding like consistency to your mixture.
  2. Sprinkle sliced strawberries with sugar and let it rest overnight as well. You can skip this step and simply use fresh sliced strawberries in the morning when you assemble the dessert.
  1. Next morning: Fill about 1/3 of 12 containers with the fruit or berries of your choice. Top it with chia mixture and some more fruit or berries.
