Speaking of memories…

This simple dish brings back some more of my childhood memories.
It is interesting how sometimes smell, taste, or sound can bring back memories to us. In my case it is this side dish.
Every summer we would stay in our little summer house in the forest by the river. The house had some limitations of course, like no running water and an outdoor restroom. Yes! Pretty big limitations. 🙂 It had a small kitchen and a room for all of us to sleep in. But even with all the limitations, it was a cozy place. The best part of it was that we spent every day outside! All summer long! We would only come back to the city on Saturday afternoon to take good long showers, get more groceries, and go to church on Sunday. Monday morning, we were back in the forest. 🙂
Okay, enough, let’s get back to this side dish.
On one of the summer evenings, one of my mom’s sisters prepared this dish for us. I really enjoyed it and asked her for the recipe later.
Her recipe calls for fresh carrots and peas. I use frozen. When you use frozen veggies, you dramatically cut the cooking time. Quick is what we all need now, especially during the week.
This recipe is good for 4-6 people
Preparation time about 30 minutes
Ingredients:
- 2 bags of frozen mix of peas and carrots, 12 oz each
- 2 Tbsp butter
- 1/2 cup of sour cream
- salt and pepper to taste
Directions:
Put a pot of your choice on medium high heat, add butter, and let it melt.

Add frozen or defrosted veggies in the pot, cover, and let it cook through. Mix it from time to time.

When the veggies are soft and almost ready, add sour cream and salt and pepper. Simmer for a few more minutes and your dish is ready.

My girls love it!

This side dish doesn’t take a lot of your attention. You can always cook something else while preparing it.
